I baked my Mum a cake for mother's day. I usually make cupcakes and recently I've attempted biscuits and cookies, but I hardly ever bake whole cakes, so this was a nice change. It was so much faster than making lots of cupcakes!
I followed a basic cupcake recipe and changed it up a bit
For the cake
♥ 200g caster sugar
♥ 200g butter
♥ 4 eggs
♥ 200g self-raising flour
♥ 1tsp baking powder
♥ 2tbsp milk
♥ 3 cap-fulls Sainsbury's Taste the difference Sicillian Lemon extract
For the filling
♥ 100g low fat soft cheese (like Philadelphia)
♥ 100g butter
♥ 250g icing sugar
♥ 1 cap-full Sainsbury's Taste the difference Sicillian Lemon extract
The silicone cake mould was from Lidl and it was about £3. I'd never used these before but will definitely get more, the cake didn't stick at all and was so easy to get out of the mould.
OMG I have never seen anything so yummy looking! I started my diet yesterday so unfortunately cannot have anything like this but it looks gorgeous! Very professional! Love lemon sponge & the silicone heart mould is fabby!

ReplyDeleteThat looks amazing! I made my mum lemon meringue cupcakes but the meringue took an agggge to get stiff enough so I'll definitely try this recipe next time! :)
